Chipotle Bean and Barley Salad

When it's hot outside, I lose my motivation to make elaborate meals.  I still want something healthful, but it needs to be easy and fast.  Enter Chipotle Bean and Barley Salad.  A bit of smokey spice from the chipotle peppers in adobo sauce.  A touch of acid from lime and white wine vinegar.  And lots of fiber loaded barley, black beans and pinto beans.  And did I mention grilled corn straight off the cob?!  Add some peppers for crunch and's hearty, delicious side or main entree for a warm summer night!  

While you can use hot sauce instead of chipotle peppers in adobo sauce, I want to urge you to use the latter.  It adds so much to the flavor, but if you're in a pinch, go with the hot sauce of your choice. In the US, you can find chipotle peppers in adobo sauce in the Hispanic aisle of any major grocer.  For a variation, throw in some sliced black olives or some fresh avocado.  Yum!

Southwestern Bean and Barley Salad

Chipotle Bean and Barley Salad

½ cup barley

1 cob of fresh corn

2-3 Tbsp lime juice

1 tsp white wine vinegar

1-3 tsp chipotle peppers in adobo sauce or the hot sauce of your choice (you can always add more, if you prefer a spicier salad!)

3 Tbsp-¼ cup olive oil

½ tsp garlic powder

¼ tsp smoked paprika

½ tsp ground cumin

1 scallion, chopped

¼ cup red pepper, chopped

¼ cup green pepper, chopped

1 15 ounce can of pinto beans, drained and rinsed

1 15 ounce can of black beans, drained and rinsed

¼ cup cherry tomatoes, halved

¼ cup cilantro, chopped


1. Add ½ cup barley and 1 ½ cup water to a medium saucepan.  Bring to a boil, and then, cover simmering over low for 40-50 minutes.  Drained and rinse with cold water, and set aside.

2. Grill the ear of corn on a grill.  I covered mine in foil, and grilled on a gas grill on HIGH for about 15-20 minutes.  Remove from grill, cool and cut corn off the cob.

3. In a large mixing bowl, add lime juice, white wine vinegar, adobo sauce or hot sauce, olive oil, garlic powder, smoked paprika, cumin and a generous amount of salt.  Whisk until it's very well incorporated and slightly aerated.  Add everything else listed in the recipe, and stir until well combined.  Taste, and adjust seasonings, if needed.  Serve.
