What could be easier to make than marinara?! The ingredients are so simple, and it cooks up fast. The most important thing is buying "good" canned tomatoes. I'm thinking of brands like Pomo, Mutti, or San Marzano. Or if your garden has been generous, make your own tomato puree, and cook up loads of this sauce to freeze and enjoy throughout the year!
1 small onion, finely chopped
4 garlic cloves, finely chopped
2 Tbsp olive oil
1 ½ tsp dried oregano
1 tsp dried basil
½ tsp crushed red pepper
1 14 ounce can of tomato puree
1 15 ounce can of tomato sauce
2 Tbsp tomato paste
½-1 tsp agave, or your favorite sweetener
Your favorite pasta!
1. Add olive oil, onions, garlic and a dash of salt to a large heavy pot or dutch oven. Saute over low heat for 3 minutes.
2. Add oregano, basil and crushed red pepper, and sauté for another 2 minutes.
3. Add the tomato puree, tomato sauce, and tomato paste. Cover with a lid, and simmer for 15 minutes over low heat.
4. Add agave, taste, and adjust seasonings, if needed. Serve over your favorite pasta.
