This recipe combines all my favorite things—okra, curry spices, and grilling! Best of all, it is incredibly easy, quick to make, and flavorful. It makes an awesome side to any cookout or summer meal.
While I use a grillable pan with aluminum foil over the top of it to grill the okra, you can also create a pouch out of non-stick aluminum foil. I find that the pouch is a little cumbersome with so much okra inside it, so I recommend using the grilling pan; however, if you are make less okra or feel up to the challenge, a pouch of non-stick aluminum foil can work.
Grilled Curry Spice Okra
5 cups fresh whole okra
6 Tbsp vegan butter, sliced
2 tsp ground turmeric
2 tsp smoked paprika
1 tsp chili powder
1 tsp onion powder
½ tsp ground cumin
Salt, to taste
1. Line a large, shallow grillable pan with non-stick aluminum foil. Spread okra out in a single layer over the foil.
2. Place slices of vegan butter over the okra—spacing the butter out a bit to make sure that everything will get a good coating of butter once it’s on the grill. In a small bowl, combine all the spices together. Sprinkle over the okra evenly. Sprinkle with salt.
3. Cover the pan of okra with aluminum foil, and place on a grill that’s reached 450 F. Grill for ~7-10 minutes, or until it reaches the level of char that you prefer. Remove from the grill, and stir to ensure that all the okra are well-coated with the melted butter. If it isn’t coated well enough, add a little more vegan butter :) Taste, and adjust seasonings, if needed (more salt?). Serve immediately.
